One thing that makes Nourish settlement worth it may be smithing. To smith stuff/lev smithing you need to afk alot in towns. It´s a great way to make some money on tradeing, with the later skills in smithing you can make alot of cash buy hunting scrubs or buying iron/wood and improve to higher versions etc and sitting in one of your own town and gaining benefits at the same time is not bad.
The game doesnt let me actually defend in a siege. It only gives me the option to break out of sally out - never actually defend. You have to wait. Your options only exist while under siege. When they start the attack you will be asked if you want to join the defenders.
